Corn Casserole

I was given this recipe from a good friend of mine, and teaching colleague April Bieri. I was in charge of taking corn to Thanksgiving, and I thought this was a bland idea. In discussion with April she shared this amazing recipe to replace boring ol' corn. My dish was hit and the pan was empty.

Got this from my mother, not sure where she got it from but it’s definitely good stuff. I doubled the recipe for Easter, worked out well but had to increase time by about an hour. Rory McGarry -

My mom used to make this for me and my brother and our friends. She still makes it. I took it from her to make for my husband and I, its a quick easy meal to make, when we have kids over I get them in the kitchen to help me make it. Veon A. Wesley -

I found this handwritten in one of my Moma’s recipe stash boxes. The box was for recipes that interested her that she planned to fix for family, mostly for the grandkids. She got around to some of them but not all. She would’ve had to lived another 20 years to fix them all. Sonya Bankester -

There was this Italian Restaurant in Lower Manhattan that made great Polenta over Sausage and Peppers. I love polenta, but you have to stir it a lot to make. I decided to try a short cut and came up with this idea. Not as creamy as that old restaurant, but still very good. Another crowd favorite in my large and picky family.Basically, this can be made with any meat and vegetable combination. In the future, I plan on making it over Chicken & Broccoli. So far, I have made it over Chicken & Peppers and Sausage & Peppers(Twice). For the picture, I made it over Sausage &Peppers.I hope that you enjoy it as much as I did. The only negative to this dish is when it is over. :-(Enjoy! J.A.B.
