My family really enjoyed this dish. A lighter sauce and very flavorful.

Ingredients

  1. 16 ozPackage of fettichini noodles
  2. 210 oz. cans diced tomatoes
  3. 110 oz. can Rotel tomatoes.
  4. 1 lbItalian sausage
  5. 1/2 mediumonion - chopped
  6. 1 packagesFresh mushrooms - cleaned and sliced
  7. 2Zucchini's - sliced
  8. 2 cloveof garlic chopped
  9. 1 tbspItalian seasoning
  10. 1 tspSalt
  11. 1 tspPepper
  12. 1/2 cupMozzarella
  13. 2Chicken bullion cubes

Cooking Instructions

  1. 1

    Cook pasta according to directions. Add the chicken bouillon cubes to water to give your noodles flavor.

    Mix sausage,onions, Italian seasoning, garlic, salt and pepper together. Roll into meatballs and cook on medium-high heat, turning the meatballs several times.

    Drain excess grease from pan and add the can tomatoes sliced zucchini, and sliced mushrooms. Reduce heat to simmer and cook for 20 minutes.

    Plate your pasta, sauce and top with mozzarella. Serve with salad and garlic toast.
