Steps

Set filets in shallow bowl of cold water; set aside.

Mix olive oil, paprika, salt, and ground pepper.

Preheat skillet on high- it's important the skillet be very hot before adding the fish.

Remove tilapia from water and place on a plate. Thoroughly baste tilapia with olive oil mixture on both sides.

Once skillet is hot, coat with cooking spray and add tilapia.
- 6
Let filet blacken for 1 minute, then flip. Blaken other side for 1 minute and reduce heat to medium. Continue sauteing until completely cooked through and flakey.
