Ingredients

  1. 1 cupfine ground corn meal
  2. 1 cupAP flour
  3. 1 tspsalt
  4. 1/4 cupsugar
  5. 3 tspbaking powder
  6. 1/3 cupoil
  7. 1 cupmilk (I use almond)
  8. 2large eggs, wisked
  9. 1jalapeño pepper, finely diced (optional)
  10. 1 cupshredded cheddar cheese (optional)

Cooking Instructions

    Preheat oven 425°

  2. 2

    Grease 8x8 pan

  3. 3

    Combine dry ingredients (including jalapeño and cheese)

  4. 4

    In separate bowl, combine liquid ingredients

  5. 5

    Slowly add dry to wet

  6. 6

    Mix until just combine. Do not over mix.

  7. 7

    Bake 20-30 minutes, until golden and toothpick inserted comes out clean

  8. 8

    Cut after cooled

  9. 9

    1 batch makes 6 large muffins, fill greased muffin wells 2/3rds full. Bake at 400 for 20 minutes until tops are golden and toothpick test comes out clean

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
