Mexi Chicken Salad

Ingredients

  1. 2 headsromaine lettuce, chopped
  2. 3-4chicken breast, diced and cooked
  3. 4tortilla shells, cut into strips
  4. Dressing:
  5. 1 cupsour cream
  6. 1/2 cupranch dressing
  7. 1/2 cupsalsa
  8. Toppings as desired:
  9. 1 cancorn, drained
  10. 1 canblack beans, rinsed & drained
  11. 1 canRotel, drained
  12. cheddar cheese
  13. onion, chopped
  14. green onions, sliced
  15. tomatoes, diced
  16. avocados, diced

Cooking Instructions

  1. 1

    Cook chicken completely and set aside.

    Place tortilla strips on a baking sheet; spray with cooking spray and sprinkle with chili powder. Bake under broiler on low until crisp and slightly browned. Set aside.

    Mix dressing ingredients together until smooth and incorporated.

  4. 4

    Mix together the corn, black beans and rotel in medium bowl.

  5. 5

    Make an assembly line for plating with all cold ingredients.

  6. 6

    And warm ingredients.
