Cooking Instructions

Remove the stems and seeds from the chiles, wash them, and soak in water for 15 minutes until softened.

Blend all the ingredients with the liquids, then strain the mixture.

In a dish, layer some marinade, then a piece of pork, alternating marinade and pork until all is used.

Cover with plastic wrap and marinate overnight in the refrigerator.

To assemble the spit, start with a piece of onion, then stack the pork slices from smallest to largest, finishing with half a pineapple on top. If you have a rotisserie, use it; if not, cook on a griddle or skillet.

Slice the meat, finish cooking on the griddle if needed. If the meat is a bit dry, sprinkle with the blended mixture. Warm the tortillas, assemble the tacos, and serve with cilantro, onion, and hot sauce.
