Mike's Mexican Sick Day Soup

Since the rest of us were super distracted making other dishes - I charged my more advanced 8 year old culinary student with making a healthy Mexican soup for the sick ones. This is what she came up with. It was so easy - she didn't even sweat her veggies. It was just, "Everybody in the pool!" Anyway, delicious work kiddo!

Cooking Instructions

Throw everything in your pot [except side options] and simmer for 45 minutes. Stir regularly.

Serve piping hot with any of your side options. Enjoy!

As the old adage goes, "When it rains. It pours."13 of my 15, 7 and 8 year old students showed up today with terrible head and chest colds. With their lack of taste and smell, I decided an extremely flavorful Mexican, "tummy feel good," soup was in order. Plus, an extra spicy soup to clear their sinuses that was packed with proteins and vitamins was needed. This recipe also had to be fast and super easy as afternoon naps were desperately needed by all.Anyway, I doubled this recipe for the kids. But, as listed, it'll easily serve 4 as a main dish and 8 as a starter soup. Know that white rice goes great in this delicious sick day dish as well. But, it's your choice! MMOBRIEN -

Since 1/2 of my youngest students are getting over the flu - the other healthy 1/2 decided to make this spicy little Mexican vegetarian soup for them. Especially with extra spice and broth for their stuffy noses & sore throats.They also served their soup with tortilla chips to scratch their buddies throats and flour tortillas to absorb any icky acids in their tummies. This is a high flavor - high sodium chicken noodle soup meant for those with the common cold or a severe head cold. The higher flavors are for a sufferers lack of smell and taste. The higher sodium content is meant to prompt the intake of fluids following their meal. The piping hot broth is to soothe their sore throats.The vegetables - for their valuable vitamins. AKA: Yakamein Soup.According to the New Orleans Historical Society, this soup was invented out of necessity by the South African and Japanese railroad slaves in the mid 1800's.This delicious soup is traditionally made with tender, long simmering beef chuck. I typically use my leftover prime rib from the holiday meals. But, beef chuck works great as well.This salty soup, [meant to encourage fluid intake] always includes sliced boiled eggs. It's also offered with Louisiana Hot Sauce, Worcestershire, Ketchup, Soy Sauce and fresh crispy chilled chives as sides and garnishments.This soup is craved by late night Bourbon Street party goers and is commonly served from the back of pick up trucks by independent sellers in New Orleans.It's served in styrofoam cups for both convenience and, the fact that the styrofoam tends to absorb some of the beef fat in this soup. It's traditionally eaten with chopsticks and the piping hot broth is sipped directly from the cup.This is the traditional recipe for Old Sober. But, feel free to add any additional fresh ingredients you desire. For instance, bones with its marrow and Udon noodles. Also, fresh sliced mushrooms or Jalapeños as a garnish are great in this soup! Remember when we were kids & we were read fairy tales? Well, that's what I do with my students when we're waiting for bread to rise. Anyway, this week's challenges are all about culinary fairy tales.Well, some of the most recent stories I read them were of Stone Soup & James & The Giant Peach. For those in the know, the first is a story about starving travelers who had nothing to their names other than a massive cooking pot.When they came upon a town & asked for food, the townspeople quickly shunned them & held tightly to their reserves. With that, the starving travelers were forced to think of something creative.Eventually they filled their large pot with water, heated it & added rocks. As the townspeople passed, their inquisitive nature took hold & they asked what the travelers were doing. The travelers responded, "Why, we're making the best soup you've ever tasted! The only problem is, is that it seems to be missing something?" At that point, a farmer spoke up and said "Well, I have some carrots in my cellar I can afford you."As time quickly passed, the travelers continued to make that same proclamation. Again, another townsperson would offer onions, another spuds, some corn, many fresh bread & seasonings, beef and pork scraps. Before everyone knew it, there was a massive pot of soup large enough to feed the entire town.Well, my students took a page from those books and happily fed the homeless with it today at 4:30 a.m. Stone Soup & Peach Cobbler for all! It's, "Leftover Night," here in the O'Brien Shire so, ya'll know what that means?! Dealer's choice!I swear, my students literally ran happily amuck knowing they were not only making, but delivering and serving their very own piping hot finished soups to two of our largest Albuquerque homeless shelters early this morning! As usual, they were all so stinkin' enthusiastic and excited! Kids huh?! 😉 God love em'!Anywho, my students would eventually decide upon various traditional homemade soups. Mostly stews and chicken noodle. Or, dumpling dishes. Always a great idea. But, one of my 7 year old students decided to get their Asian on and go altogether Ninja rogue on their asses last night! [it's kinda funny seeing as how he's so very, VERY Jewish?] 🤔Anyway, not many Americans are aware of the true origins of traditional Chinese Hot & Sour Soup. This specific soup was initially created out of absolute necessity. Early on, it consisted ONLY of older Chinese kitchen table scraps. And, not the good kind either folks! [you know, like the iced cold moo goo we feed off of at 2:00 am flat assed drunk but always seem to somehow really appreciate?] Yup, you remember. I know you do. ;0)Hence the prompt additions of rice wine vinegar, soy and sugars to mask any [how shall we say] more curious flavors? Even the Chow Mein Noodles were old, dusty and leftover. Yup, it was all a grand, delicious cover up! That's right, everybody in the pool! Old or new - didn't matter! MMOBRIEN
