When you have the Costco pack of cream cheese and very ripe tomatoes...

Ingredients

Serves 4 servings
  1. 4regular size tomatoes
  2. 1 cupshrimp (fresh or frozen)
  3. 4white mushrooms
  4. 1/2onion
  5. 1/2 cuppeas (frozen)
  6. 3 tablespoonscream cheese
  7. 1/2 tablespoondried basil
  8. Dashsalt and pepper (for taste)
  9. 250 gdried pasta
  10. olive oil

Cooking Instructions

  1. 1

    Finely chop onion and sauté

  2. 2

    Chop tomatoes into chunks and place in pan with onions. Put lid on and simmer for 5-7 mins until tomatoes and soft and can be mashed

  3. 3

    In a separate pan sauté shrimp until cooked and a bit golden and place in tomato and onion sauce.

    In the pan that cooked the shrimp, sauté the mushrooms.

  5. 5

    Start to cook the pasta in salted water until al dente.

  6. 6

    Put mushrooms in sauce.

  7. 7

    Mix in cream cheese and simmer. Add peas.

  8. 8

    Place cooked pasta in sauce and enjoy!
