Ingredients

  1. 1 lbground beef
  2. 2 cupsdry pinto beans
  3. 1garlic clove chopped
  4. 1Lg green bell pepper
  5. 1med. yellow onion
  6. 1 tbspchili powder
  7. 2 packetstaco seasoning
  8. 1 tbsptomatillo powder
  9. 1 (8 oz)can tomato sauce
  10. 1 (14.5 oz)diced tomato's (undrained)
  11. Sour cream (for garnish)
  12. 1med. cut tomato (for garnish)
  13. 1 Cupfinely shredded Mexican cheese
  14. 1 Cupbeer (I use Budweiser)

Cooking Instructions

    Add pinto beans to a large pot and cover with cool water (at least a few inches above the beans as they will expand). Soak for at least 6 hours or overnight* uncovered at room temperature.

    Once beans are soaked, drain and set aside.

  3. 3

    Next add drained beans and cover with water about 2 inches over the top, as the beans will expand while cooking. Add the chopped garlic.

    Set heat to low or medium-low and simmer for 40-50 minutes

  5. 5

     Brown ground beef and onion.

  6. 6

    Combine all ingredients to the cooked beans except for shredded cheese and garnish items.

  7. 7

    Cook for an additional 35 minutes on med-low heat.

  8. 8

    Add the cheese and cover long enough for the cheese to melt.

  9. 9

    To finish add a dollop of sour cream to the individual servings along with the fresh cut tomatoes.
