Chickpea-Spinach Croquettes

Cooking Instructions

Blanch the Spinach leaves using some water for 5 minutes
- 2
Discard the water next and chop the leaves roughly
- 3
Add the spinach in a blender, followed by the chickpeas
- 4
Add salt, paprika, garlic, coriander seeds and pepper corns
- 5
Use some oil and blend until smooth
- 6
Transfer the mix in a bowl and add the gram flour/ bread crumbs
- 7
Mix well and refrigerate 10 minutes covered

Heat oil in a pan

Prepare croquettes of the mixture

Shallow fry them in batches

Flip and fry until brown and crisp on both sides

Place the fried croquettes on an absorbent paper for sometime before serving

Serve while warm with dips of your choice (yogurt-tahini Dip is recommended here.)

My mother loves kabocha squash, so I made these croquettes for her. She asked me to make just plain croquettes without other ingredients and I made these simple croquettes. It was easy to make! (I sent my mother frozen ones.)-Before microwaving the kabocha squash, wet 2 pieces of kitchen paper and squeeze out the excess water.
