Ingredients

  1. 1whole chicken, or several large breasts
  2. 3 Tbspolive oil
  3. 1 cuptomato sauce
  4. 1 (15 ounce)can of diced tomatoes
  5. 1 Tbspchilli powder
  6. 2 tsppaprika
  7. 1 tspsalt
  8. 1 tspcumin
  9. 1 tspgarlic powder
  10. 1/2 cupwater
  11. As neededCorn tortillas
  12. SomeCabbage salsa
  13. 1/2cabbage
  14. 1/4 bunchcilantro
  15. 1lime
  16. 3 Tbspmayonnaise
  17. 1large clove of garlic chopped and mashed with
  18. 1 tspsalt until creamy

Cooking Instructions

    Boil the chicken in salted water until it pulls apart with a fork. I use a frozen whole chicken or frozen chicken breasts and boil them in water the covers them for 1.5 hours. OR now that I have an instapot I cook them under pressure for 1 hour, this uses much less water. (make sure to cook those bones down for soup later)

    Take chicken out of the water and allow to cool until you can handle it. Then using two forks, or your hands, shred the chicken.

    Heat oil in a large frying pan and add all of the incredients and cook until well combined. Adjust seasonings to taste.

    To prepare the corn torialls, wrap in a wet papertowel and microwave for 1:30 or unil they are all soft and a little curley.

    Serve with cabbage salsa. Make sure to mash the garlic, it really helps spread out the flavour.

    Other variations include fish tacos, beef tacos, and refried bean tacos.
