Vegetable Risotto with Manchego Cheese and Crispy Ham

Hello friends! Today we're going to prepare a great Italian dish, risotto, but with our own twist. Risotto is made in a unique way and is very typical of Italy, especially the northern part of the country. It's quite different from how we make paella or other types of rice.
Risotto is surprising for its creamy texture, and like all rice dishes, you can add all kinds of ingredients as they blend perfectly. We've prepared this risotto in an Iberian style, meaning with something very much ours like Manchego cheese and serrano ham.

This dish reminds me a lot of a risotto my mother makes, which turns out delicious. It's a vegetable risotto, but I've added Manchego cheese and crispy ham, giving it my personal touch... Evolution from mother to son :)

Finely chop the garlic and add it to the pan, without letting it brown too much. Next, add the sliced leek, then the green garlic, and finally the chopped mushrooms. Let everything soften.

Once everything is well softened, add the rice and sauté everything together a bit. Add the broth, which should already be hot. Pour in half of the broth and stir occasionally, adding more broth as needed, little by little.

After 15 minutes, add a small piece of butter and grated cheese. Continue stirring everything together. By this time, there should be almost no broth left, which will have been absorbed as you stir to integrate the butter and cheese. For the crispy ham, place two slices of ham in the microwave on high for 1 minute. Chop one slice into very small pieces, and leave the other whole.
