Steps

Peel and devain the shrimp

Boil until pink.

Place the tiger prawns into a bowl and add all the remaining ingredients.

Stir well, cover and leave to marinate in the fridge for at least 2 hours, mixing and turning the prawns occasionally

Arrange 2 or 3 of the lettuce leaves on each of 4 individual serving plates
- 6
Spoon the prawn salad onto the letters leaves. Garnish with fresh coriander and serve at once
