Ingredients

20 mins
  1. 250 gextra large tiger prawns
  2. 1 tablespoonOriental/Asian fish sauce
  3. 2 tablespoonslime juice
  4. 1/2 teaspoonsoft brown sugar
  5. 1small fresh red chilli finely chopped
  6. 1spring onion finely chopped
  7. 1small garlic clove crushed
  8. 1 inchpiece fresh lemongrass finely chopped
  9. 2 tablespoonschopped fresh coriander
  10. 3 tablespoonsdry white wine
  11. 8lettuce leaves to serve
  12. Fresh coriander's sprigs to garnish

Steps

    Peel and devain the shrimp

  2. 2

    Boil until pink.

  3. 3

    Place the tiger prawns into a bowl and add all the remaining ingredients.

  4. 4

    Stir well, cover and leave to marinate in the fridge for at least 2 hours, mixing and turning the prawns occasionally

  5. 5

    Arrange 2 or 3 of the lettuce leaves on each of 4 individual serving plates

  6. 6

    Spoon the prawn salad onto the letters leaves. Garnish with fresh coriander and serve at once
