Delicious! Serve with the fantastic tomato chutney from @Nuriafafa!! Thanks to Irene and Sara for organizing the Cookpad event at Miele (Barcelona). We had a great time 😉
Cooking Instructions

Sauté the chopped green onion with the garlic and carrot. Season with salt and pepper and set aside.

Boil the cauliflower and potatoes in water. Drain and mash with a fork.

In a bowl, mix the well-drained lentils with the potatoes, cauliflower, and spices. Mix well. Taste and adjust salt if needed.

Preheat the oven to 400°F (200°C).

Cut the phyllo dough into strips and lightly brush with vegetable margarine. Place the filling at one end and fold into triangles to form the samosa.

Place on a baking sheet lined with parchment paper. Bake for 20 minutes at 400°F (200°C).

Another one for my Butternut Squash series ;) Samosas are often made with potatoes but I tried it with butternut squash instead! I also find baking samosas instead of frying is much easier and they turn out less oily.There are a lot of spices in here but if you don't have them all, don't worry. It will still taste good if you leave something out or you could even replace with curry powder or something else you like.Makes 8 samosas.
