Ingredients

  1. 500 gmwater spinach chopped
  2. 10 piecesBori/ lentil dumplings
  3. 1 teaspoonpanch phoran/ five spices
  4. 2dry red chillies
  5. 4green chillies slitted
  6. 1 teaspoonturmeric powder
  7. 1medium sized brinjal cubed
  8. to tastesalt and sugar
  9. as requiredMustard oil

    Heat some oil in the wok and fry the bori. Keep them aside.

    In the same oil tamper the panch phoran and dry red chillies and saute till the aroma comes out.

    Add the brinjal cubed, green chillies, and also add the turmeric and salt.

    Fry the brinjals till golden brown in colour.

    Add the water spinach and mix them very well.

    Cover the wok with a lid and keep it in medium flame.

    After 10min, uncover the wok and fry the water spinach in high flame, till the moisture disappears.

    Check the salt and add if required. Add some sugar. Let it be a bit sweetish.

    Break the bori and add them in the wok. Mix them well. This will give a crunchy texture to the preparation. Don't keep it in the flame for long after adding the broken Bori.

    Serve hot.
