Boiled the eggplant for long so be careful about that everyone! It only needs to boil, for a few minutes, if even that long. I substited the nutmeg w/ cinnamon and since I don't use spices besides my regular--salt, pepper, sometimes lemon pepper, and garlic powder--it seemed not to ruin the white sauce much. But the white sauce, itself?I have to say that it was very bland and was only uplifted by the spice used. If I had written that recipe I would have made a note of it's bland taste, offered alternatives or some invredients to add to liven it up a little. I understand that the sauce is really just an accent to the filling but even still, instead of adding to it, I feel like it just took away from it. Oh, and I used ground beef instead of chicken since that's what I have at home when I found that recipe but I feel like the chicken would have been a better choice, meat-wise.
