A delicious hit in our house! So moist and packed with flavor! I did omit the walnuts and raisins at the request of my husband and children. I personally prefer raisins in my carrot cake for the added sweetness, moisture, and flavor, but I was out voted this go-around. I'll make a scaled down cake just for myself with raisins in it sometime. Lol

Hurrah!!! Sultanas and Walnuts are essential for my carrot cake, but I have a friend who hates dried fruit, and I didn't like walnuts when I was a child. I am glad you and your family enjoyed the cake. Thank you, Stephie, for trying it out.
