
My boyfriend's mom gave us a huge zucchini from her garden, so I tripled the recipe. Also, we used olive oil.We made 24 cupcake-sized muffins, an 8x8 deep dish, and a 13" oval-shaped casserole dish.The deep dish was very moist and delicious. The loaf pan seems like the way to go.

Indeed. Greek yogurt and sour cream are my fav substitutions for eggs in terms of binding plus they taste awesome ♥️
