Just cut a square and poured a little chocolate then put fudge in center then poured more chocolate over it

I love ít! My fudge I made last night didn't set right though! :-(
Maybe I didn't stir ít long enough when it came down to 110°
Or, I didn't get exactly up to 234°????
Has that ever happened to u?
Sometimes it comes out perfect, sometimes, ít doesn't set. o_O

Yes it was a batch I messed up on that I used for the chocolate cups taste was good but texture was way off

Wonder what causes ít. I hate when a whooole darn batches texture is off! Cuz, that good texture is what makes ít the best fudge I've ever had in my life! Lol

I think alot of ít has ta do w the stirring at the end. The more air that's pút into ít creates that texture. I THINK. lol , but who knows. I try stirring, & pulling & stretching ít up, & stirring.

My mom use to take the pan to the sink that was filled with cold, cold water to bring the temperature down quick, then beat it. She never had a bad batch.
