This was absolutely delicious and so easy! I did make a few modifications for what I had on hand. I used 3 chicken leg quarters. I omitted Bay leaf because I discovered I had none, and I used brown sugar for its depth of flavor. I decided to shred our chicken. So, I simmered it for 1 hour, then removed it to cool enough to shred. While it was cooling I added the potatoes so the sauce to start cooking. When I returned the chicken to the pot I added some cornstarch slurry to thicken, and then simmered on low 1 hour more.
I will definitely make this again!
