- The 2 most amazing things about making stock at home 1- how many dishes you can make using your stock 3- how many batches of stock you can get out of your chicken carcasses.After you strain everything out of your stock, freeze it in a freezer bag until you want to make more. In fact, You can add any bones you’d like.The more stock you want to make, the more chicken you’ll need.If, like me, you want a collagen rich broth, use more skin and bones- I like drumsticks for this. Chicken feet work exceptionally well, but there’s a unique flavor to them that I don’t prefer.

- I have this in my freezer all the time. It’s a flexible recipe. I’ve added shredded carrots, cabbage, Seseme oil, water chestnuts, bean sprouts, kale or chard- really anything lying around.I’ve tried to use pork, but you’d need to add breadcrumbs, cornstarch and an egg

- 1 lbs shredded chicken- I’ll use the meat off a rotisserie
- 1 bag shredded lettuce- use your favorite- butter, romaine, iceberg or a mix enough so that it’s equal parts lettuce and chicken. Shred any lettuce you use
- 2/4 c shredded cabbage- red or nappa
- 1/2 c julienned carrots
- 2 green onions finely sliced- only use half the whites
- 1 orange, peeled and diced RESERVE ZEST FOR DRESSING or a sml can drained Mandarin orange slices
- 1/4 c julienne almonds
- 1 c wonton strips-
- 3/4 c sliced snow peas

- This recipe is amazing. You can change you protein, veggies, types of cheese to whatever you have on hand and because you don’t need a crust, it’s easy! If you adjust the ingredients, make sure you adjust your cooking accordingly. For example, instead of bacon, use ham or even turkey and you’d add it directly to your baking dish with the cooked onions.I don’t like eggs, but I was determined to figure out some preparation that satisfied me because my neighbor gives me fresh eggs! This recipe checks that box! It’s delicious with a silky consistency that my whole family loved
