Very easy to make and was delicious! My family lives it and has already asked when I'll bake it again!! Definitely worth a try, you don't need to be a master baker, anyone can make this!

I added extra Mexican cheese, red onions, sazon, cumin, tumeric, paprika, garlic and cayenne. Also used corn tortillas and topped with black olives, cheese and Rotel. Yum!

I subbed plain Greek yogurt for sour cream and used thighs. I also chose to use extra freshly shredded Parmesan cheese. My family loved it! :-)

I fried up my whole wheat tortillas - great idea! Added refried beans to my meat and Rotel with the enchilada sauce. Delicious!

This is an incredibly sweet dish! Too sweet for my tastes but the guys liked it! I also added a dash of vanilla extract to help perk up the pudding/cool whip mix. Also, I added both boxes together, worked just fine :-) Thanks for sharing!!! :-)

We absolutely love this recipe, have made it several times! I choose to get the big tub of cool whip to make extra frosting instead of using the milk chocolate; I think it's too much. This is a terrific recipe, a must try!!! :excited
