Self isolating due to Covid-19 has driven me to eat more healthy food. One of traditional food that quite popular in Indonesia (my home country) and has been categorised as healthy food due to its ingredients which is rich in veggies is Gado-gado. This is such veggies salad with peanut sauce. The recipe has been modified due to the availability of the veggetables in the market in Australia, especially in Brisbane.

Bahan-bahan

  1. Bahan Saus Kacang (Peanut sauce)
  2. 5 siungbawang merah (red onion)
  3. 4 siungbawang putih (garlic)
  4. 3cabe rawit (add more chilli, if you like spicy food)
  5. 200 gkacang tanah sangrai halus (ground peanut)
  6. 2 lembardaun jeruk (lime leaves)
  7. 2 sdmAir asam (Tamarind)
  8. 5 sdmgula merah serut (coconut/palm sugar)
  9. 1 packSantan kara @65 ml (coconut milk)
  10. secukupnyaGaram (salt)
  11. SecukupnyaGula pasir (sugar)
  12. Penyedap ()
  13. Bahan sayuran (veggie mix)
  14. 2 buahWortel (sliced carrot) ukuran sedang potong korek (sesuai selera, yg penting layak kunyah)
  15. 2 genggamtauge (washed bean sprout) yg telah dicuci dan dibersihkan
  16. 2 Ikatkacang panjang (snake beans) cuci dan potong
  17. 1 buahbesar kentang (potatoes) yg telah disikat dan dicuci bersih, potong2 (tdk perlu dikupas asal yakin bersih nyucinya, krn bagian terenak kentang itu ada di bagian kulitnya, katanya)
  18. Baby cucumber (timun) potong sesuai selera
  19. Bahan pelengkap:
  20. Lontong (rice cakes)
  21. Kerupuk (rice/prawn crackers)
  22. Telur rebus (boiled eggs)
  23. Bawang goreng (fried shallots)
  24. Sambal bawang

Cara Membuat

    Saus kacang: haluskan bawang merah dan bawang putih, tumis hingga harum, masukkan cabe yg jg telah dihaluskan, masukkan daun jeruk, tambahkan santan. Masukkan kacang halus, aduk rata. Masukkan air asam, masak hingga meletup (sambil terus diaduk). Beri gula,garam, penyedap, test rasa.

    Didihkan air, masukkan wortel, masak hingga krenyes2, angkat dan tiriskan. Air rebusan jangan dibuang, masukkan kentang, masak hingga empuk, angkat tiriskan. Masukkan kacang panjang, rebus kurleb 7 menit, angkat tiriskan. Siram tauge dgn air mendidih, lalu tiriskan

    Tata sayuran, di atas mangkuk. Beri potongan telur, timun dan kerupuk. Siram dgn saus kacang, dan taburi dgn bawang goreng. Sajikan dhn lontong dan sambal.

Seorang istri sekaligus mama dgn tiga anak, kami sekeluarga pindah ke Brisbane krn alhamdulillah mama dpt beasiswa Australia Awards, dan bs lanjut ke jenjang PhD. Sejak tinggal di Australia, mama "dipaksa" untuk bs bagi waktu, antara kegiatan rumah tangga dan riset. Disini tidak ada sanak keluarga dekat, jd apa2 mesti dilakukan sendiri. Plus, tidak ada warteg, banyak sih resto tp Kami muslim jd jajannya gak bs di sembarang tempat krn tinggal di negeri kangguru yg mayoritas non muslim. Tapi, alhamdulillah ternyata disini di sini sudah ada bbrp halal butcher dan produk2 yg telah berlogo/bersertifikasi halal meski tdk sebanyak di Indonesia. Jadi mama belajar memasak dgn menu yg sedikit berbeda krn klo tidak,maka anak2 akan bosan dgn menu yg itu2 sj.
