This is yet another variation, that of shallow fried Okra. Wash and let the Okra fully dry up. Leave it in a colander with a bowl underneath so that it dries up well for an hour. Afterwards slice it thinly. Heat Oil in a kadai. Add Curry Leaves, Green chillies and Ginger garlic paste at first. Fry for a minute or two before popping in the other powdered spices and the sliced Okra.

Shallow fry on a low heat with a lid on. Keep stirring in between at regular intervals so that it cooks well. It will be done in very less time. After 10-12 minutes of cooking, saute it on a medium high heat for the next 5 minutes. You can fry it for a longer time if you prefer crispy Bhindi. Otherwise 20-25 minutes are enough. Serve with Chapatis, Phulkas and Boiled Rice with Ghee. It tastes just right. There is absolutely no need of any other Sabzi or Curry. Enjoy!
