Sharing one of my all time fav pulao😋the uniqueness of this easy vegetable pulao lies in use of bay leaf, cinnamon and cloves which provides nice and complex aromatic feel that simply makes juices flowing in mouth.
Cooking Instructions

Wash and Soak rice for 1 -2 hour

Peel and cut all vegetables

Heat up a deep wok add oil and whole spices fry for 1 minute then add onions and fry

Now add crushed green chillies and ginger garlic paste fry for 2 minutes

Now add vegetables salt chicken powder chopped green chillies whole spice powder and fry

I always add homemade yoghurt in my rice 😇 fry until oil seperates

Now add as required water let it boil now cover and cook on low heat until veg are tender

Then add soaked rice cover and cook for 10 minutes

When water dries up simmer it on a low heat for more 8-10 minutes turn off the flame and dish it out😍

Awadhi Cuisine is from the city of Lucknow which is the capital of the state "Uttar Pradesh".It's famous in North India and other countries where it's cooked in different styles with many aromatic spices.The difference between biryani and Yakhni Pulao is that while Yakhni Pulao is made by cooking the meat in with warm aromatic spices in water till the meat is tender, then adding the rice in the meat broth along with meat which is then sealed and cooked over low heat till it's done.Whereas; Biryani, the rice is boiled or parboiled separately in spiced water and then leared with meat curry which is then sealed and cooked.Yakhni Pulao is not spicy like biryani. but very fragrant and delicious to eat.
