Ingredients

6 servings
  1. 500 g5% fat mince beef
  2. 250 gdried macaroni
  3. 1 tinchopped tomatoes
  4. 1 tinblack beans
  5. 1white / yellow onion
  6. 1yellow pepper diced
  7. 1red pepper diced
  8. 1/2 tubfat free cottage cheese
  9. 1/2 tubPhiladelphia lightest
  10. 2beef oxo cubes
  11. 2garlic cloves
  12. 2 tsppaprika
  13. 2 tspcumin
  14. 1/2 tspcinnamon
  15. 1 tspcoriander
  16. 1/2 tspturmeric
  17. Salt and pepper
  18. 1 tspchilli flakes
  19. 2 tspmixed herbs
  20. 60 gcathedral city light
  21. Chopped spring onion to serve

Cooking Instructions

    Mix the mince beef with salt and pepper to taste, 1 tsp paprika and 1 tsp cumin, then roll into small balls

    Sauté the diced onion and garlic with some salt until translucent, add the diced peppers and soften

  3. 3

    Add the remaining spices and herbs and cook through for 2 minutes until fragrant

  4. 4

    Add tinned tomatoes and then refill the tin with water and add that too

  5. 5

    Add both oxo cubes and stir until dissolved

  6. 6

    Add the black beans and cook for 5 mins

  7. 7

    Add the dried pasta and stir often until 50% cooked

    Then add the cottage cheese and Philadelphia and stir through until combined

  9. 9

    Simmer and reduce for 5 minutes stirring often

    Meanwhile brown the meatballs

    Place the meatballs on top of the pasta and sauce, and grate over the cathedral city cheese

  12. 12

    Pop under the grill until melted and bubbly

  13. 13

    Sprinkle over chopped spring onions and serve
