This recipe came about because I didn’t want the burgers I had prepared, and I wanted pasta!
Tex Mex Mac N Cheese with Meatballs
This recipe came about because I didn’t want the burgers I had prepared, and I wanted pasta!
Cooking Instructions

Mix the mince beef with salt and pepper to taste, 1 tsp paprika and 1 tsp cumin, then roll into small balls
- 2
Sauté the diced onion and garlic with some salt until translucent, add the diced peppers and soften
- 3
Add the remaining spices and herbs and cook through for 2 minutes until fragrant
- 4
Add tinned tomatoes and then refill the tin with water and add that too
- 5
Add both oxo cubes and stir until dissolved
- 6
Add the black beans and cook for 5 mins
- 7
Add the dried pasta and stir often until 50% cooked
- 8
Then add the cottage cheese and Philadelphia and stir through until combined
- 9
Simmer and reduce for 5 minutes stirring often
- 10
Meanwhile brown the meatballs

Place the meatballs on top of the pasta and sauce, and grate over the cathedral city cheese
- 12
Pop under the grill until melted and bubbly
- 13
Sprinkle over chopped spring onions and serve

I had some leftover meatballs from my meatball pizza, so I thought I’d give this a try something different other than meatball subs or in a pasta... plus there’s is veggies in this for the kids.... good for soup and salad night (everyone seemed to like it and asked for me. My mom asked me yesterday what I was thinking of posting for my next recipe this week, I had decided that I was going to make Giouvarelakia – Greek Meatball Soup. We had taken out all the ingredients, set them on the counter, but before I could start cooking I had a few things to do. When I finally went to the kitchen, to my surprise my mom went ahead and did everything from combining the ingredients to cooking the soup.. So, this means I have no other pictures than the featured image to show how this is prepared. I do apologise. 🙂This is a lovely, warm winter soup that combines beef, rice, dill and many more ingredients, that will satisfy that hungry feeling when your coming in from the cold. It has been rather cold here and what else better to eat than soups. 🙂 This one though is different because it also has that tasty addition of lemon juice which just gives each spoonful a WOW taste. (I was going to write a WOW factor but I think that would be a bit too much) hahahaI hope you enjoy this lovely soup recipe 😉 Foodzesty
