Ingredients

  1. Ingredients for Pasta
  2. 3/4 cup Penne Pasta or any Pasta
  3. 4-5 cupsWater
  4. For Veggies:
  5. 1/2 teaspoon Butter/Oil
  6. 1 teaspoonfinely chopped Garlic, optional
  7. 1/4 cupchopped Carrot
  8. 1/4 cupchopped Green Capsicum
  9. 1/4 cupchopped Mushroom
  10. 1/4 cupchopped Broccoli
  11. 1/4 cupchopped Sweet corn
  12. 1/4 cupchopped Onion
  13. 2green chilli (slit them in 2)
  14. to tasteSalt
  15. For White Sauce:
  16. 1½ tablespoons Butter
  17. 1 1/2 tablespoonsMaida (all-purpose flour)
  18. 1 1/2 cupsMilk (250 ml)
  19. 1/4 teaspoondried Oregano, optional (or pizza seasonings)
  20. 1/4 teaspoonRed Chilli Flakes
  21. 1 pinchBlack Pepper Powder (or crushed pepper)
  22. to tasteSalt

Cooking Instructions

  1. 1

    For boiling pasta
    Boil raw pasta according to the instructions given on the package or follow following instructions; Take 4-5 cups water in deep sauce pan, bring it to boil over medium flame. When it start boiling, add 3/4 cup Penne pasta.

    Cook the pasta on a medium to high flame.

    When the pasta gets done to an al dente texture or cook it till 70% now, switch off the flame. For a softer texture, you can cook the pasta more if required.

    With a strainer spoon, strain the pasta to cold water and remove from it.

    Making White Sauce-
    Heat a saucepan. Keep the flame to a low and add 2 tablespoons butter. You can use salted or unsalted butter.

    When the butter melts and starts to bubble, then add 1 tablespoon whole wheat flour or 2 tablespoons all-purpose flour.

    Stir the flour quickly as soon as you add it. Keep on stirring so that no lumps are formed. The frequent stirring helps the flour to cook evenly. You will see the flour frothing and bubbling up while stirring. Sauté the flour till you get a nice cooked aroma from the flour and a pale golden color.

    Keep the flame to the lowest and then pour 1 cup chilled milk in a gentle stream. Pour the milk with one hand and stir the sauce mixture with the other. The milk has to be chilled, so that lumps are not formed. If you use hot or warm milk or milk at room temperature, lumps can be formed.

    Do stir frequently while the milk warms and heats up.

    On a low flame, simmer the sauce till it thickens.

    When the sauce has thickened well and coats the back of a spoon,add the seasonings – ¼ teaspoon black pepper powder, a generous pinch of oregano, chilli flakes and salt as required. For a cheese sauce, you can add 2 tablespoons of grated cheddar cheese.

    Mix very well and keep aside. Do note that on cooling white sauce will thicken more. So you can keep the consistency accordingly.

    Cooking Vegetables-
    Cut all the veggies.

    Now add 1 tbsp of butter in a pan, saute some chopped garlic, and add all the veggies in it.

    Give it a nice mix.Add some salt in it and cook it for a minute.

    Cooking all the things together-
    Cook the white sauce for a minute.

    Now,add cooked veggies in it and give it a nice mix.Cook veggies for 1 minute.

    Then add cooked pasta, mix it all together and cook it for another 1 or 2 min in low flame.

    Add oregano and chilli flakes according to taste.

    Your WHITE SAUCE PASTA is ready.
