Wild Mustard garlic leaf and red dead nettle & wild onion dolmas Wild Mustard garlic leaf and red dead nettle & wild onion dolmas
#wildfood #different Spring time is my time of the year for foraging. So much is available right outside. You can find many of these ingredients on the side of the road as you are walking down the street. Make sure you know how to identify your wild onion and garlic. When in doubt trust your nose. Should have a strong smell of onion or garlic. Also, wild food has very strong flavors, so minimum use of salts or seasoning. Enjoy what nature already provides. Jack 5trange: Kitchen Alchemist -

Herb and Potato Frittata Herb and Potato Frittata
There are many edible wild plants that grow naturally... I’ve learned to recognize and use a few in the kitchen, thanks to my expert mother-in-law. Today I’m making a frittata... without eggs... but trust me, it’s delicious! I used wild radish greens and borage with potatoes, chili pepper, and garlic. After boiling the potatoes for 25 minutes, I added the carefully washed and chopped greens. Then I mashed everything and seasoned with salt and Pecorino cheese. I made a sauté with garlic, oil, and chili pepper, then cooked the frittata. It’s a humble dish, but full of vitamins and minerals. Paola CatalanoTranslated from Cookpad Italy -

Wild Asparagus Frittata Wild Asparagus Frittata
Thanks to my mother-in-law and her teachings, I discovered these precious gifts that grow wild. They look like climbing plants with heart-shaped leaves—wild asparagus (similar to asparagina), called "tamaro." They sprout from the ground and gradually reach up toward the sky. You can find them from late March to April. They're delicious in frittatas, savory pies, with eggs, or in lasagna. And it's so satisfying to find them... With just a few ingredients, you get a delicious dish. Paola CatalanoTranslated from Cookpad Italy -
