A meal fit for a much craved wholesome breakfast or brunch. An enjoyable cook to say the least. One pot cooks are less trouble yet yummier.
Cooking Instructions

Wash potatoes and cut with skin on into cubes

Boil enough salted water to cover potatoes. Cook potatoes in the boiling water for 2 minutes and drain

Heat oil in a pan and add potatoes. Let sizzle for a few seconds then reduce heat to medium low, keep pan covered and stir potatoes every few minutes to fry evenly. Depending on size, this step will take roughly 5 to 8 minutes to brown the potatoes

Meaning grate the tomato and stir in some paprika powder. Add this and chillies to the potatoes, stir and cover to cook the tomato. Season with salt and pepper

Form 2 holes in the pan and add an egg to each. Cook until your eggs are cooked to desired doneness. My cooked for about a medium to give me gooey yummy yokes

I thought this was a common recipe, but this egg-potato-wiener german potato recipe didn't turn up any hits when I for it. There are no onions, it's not messy, and can be made over and over again as a side dish, so I thought it might be convenient to upload it .This is a simple recipe you use with just one pan for boiling as well. Use the remaining water to boil both the wieners and potatoes without burning them. Lightly fry the ingredients at steps 4 and 5. The potatoes will become crumbly if you don't. I used to make this on the grill in a big aluminum foil packet without the sausage! Then one night was looking for a fast dinner & had nothing thawed, thought of the potatoes & realized I had nothing to go with it... So grabbed some smoked sausage from freezer, thawed a bit in microwave & sliced, put with the other ingredients which I was frying in my big skillet & walla!! Dinner!! Well fast forward a few yrs & 2 kids...I wanted to make the same meal but wanted something I didn't have to try to tend to while chasing my little ones around! So just threw everything together, tossed in the oven & hoped for the best!! Needless to say it turned out great!! I've tweaked the spices over the yrs but this way seems to please everyone's pallet!! Also a lil tip...if ur using the Italian sausages try adding a bit of oregano or Italian seasoning! It just adds a bit more flavor! I hope u all enjoy this simple & tasty meal as much as we have!! dotjeanrobin -
