One-pan Potatoes and Eggs

A meal fit for a much craved wholesome breakfast or brunch. An enjoyable cook to say the least. One pot cooks are less trouble yet yummier.

Ingredients

  1. 2eggs
  2. 2medium golden potatoes
  3. 2 Tbspcooking oil
  4. 1medium tomato
  5. 2long green chillies (optional)
  6. 1 tsppaprika
  7. Salt and pepper to taste

Cooking Instructions

    Wash potatoes and cut with skin on into cubes

  2. 2

    Boil enough salted water to cover potatoes. Cook potatoes in the boiling water for 2 minutes and drain

  3. 3

    Heat oil in a pan and add potatoes. Let sizzle for a few seconds then reduce heat to medium low, keep pan covered and stir potatoes every few minutes to fry evenly. Depending on size, this step will take roughly 5 to 8 minutes to brown the potatoes

    Meaning grate the tomato and stir in some paprika powder. Add this and chillies to the potatoes, stir and cover to cook the tomato. Season with salt and pepper

    Form 2 holes in the pan and add an egg to each. Cook until your eggs are cooked to desired doneness. My cooked for about a medium to give me gooey yummy yokes

    Serve and enjoy!
