Chapli kabab Chapli kabab
Today I am sharing the recipe of chapli kabab by one of my favourite chefs, the late Chef Zakir. I used to watch his cooking shows and learned a lot. Chef Zakir was an expert on Pakistani cuisine as well as international cuisine. He passed away in April of this year.Chapli kabab are thin ground beef patties made with aromatics and spices. Unlike your usual grilled kababs, Chapli Kababs are fried so they’re browned on the outside and tender on the inside. Chapli Kabab have a unique flavour, with ingredients like dried pomegranate seeds (anardana) to lend them a slight tang and coarsely ground coriander to enhance their already crispy exterior.Authentic Chapli Kababs are typically a medium to large flat patty, weighing around 75-100 grams per piece. They are typically about 1-2 inches in thickness. One of the characteristic features of Peshawari Chapli Kebab is its traditional cooking technique, which involves shallow (almost deep) frying the kebabs in a pan rather than grilling them. The name “chapli” is derived from the Pahto word “chaprikh/chaplet” which means “flat” and alludes to the flat, round and flattened shape of the kabab.Originally a delicacy in Khyber Pakhtunkhwa province of Pakistan, in the city of Peshawar, they are now a popular street food and restaurant favourite throughout Pakistan. The dish’s rich history and unique flavor profile make it a favorite among food enthusiasts looking to experience the traditional flavors of the region.#june2026 Sarvat Hanif -

Aloo laccha pakoras Aloo laccha pakoras
Pakoras are a must for iftar during Ramadan. It’s as if their crunch and warmth must accompany steaming cups of chai. Throw in hot samosas for added comfort. Nostalgic! How I miss these goodies from home!Pakoras are flavour-packed fritters that are light and airy. The base component of all pakoras is gram flour, onion, cilantro, spices. You can make pakoras with all kinds of vegetables, as long as they’re small enough to cook through and large enough to hold to the batter. Vegetables like spinach, eggplant, and potatoes are also added. Of course all these pakoras are named after the vegetable used for instance palak pakora refers to spinach pakora, baigain pakora to eggplant pakora and aloo pakora to potato pakora.Aloo laccha pakoras are made with potato, besan, rice flour, and regular spices. They are crispy from the outside while soft from the inside. “Laccha” basically refers to a lattice as the grated potatoes and sliced onions combined with the flours form a sort of lattice when scooped. Ensure the oil temperature is high when adding pakoras, then reduce to medium heat for the perfect crispy texture. With their crispy texture and flavourful spices, these pakoras are sure to become a household favourite for iftar because iftar without pakoras is no iftar at all! Achari Gobi Musallam Achari Gobi Musallam
Got bored of the same Aloo-Gobi Sabzi (Potato-Cauliflower Curry)? Then try Gobi Musallam, which is the vegetarian version of the shahi Mughlai dish of Murgh Musallam. In this recipe, whole cauliflower is marinated in a yoghurt based sauce and cooked in a smooth & delicately flavoured rich gravy. I gave a twist to the original recipe by adding some bottled pickle masala to give an achari flavour. This exotic dish is very delicious and can be enjoyed with naan, tandoori roti, roomali roti, jeera rice, pulao or plain Biryani. #goldenapron Bethica Das -
