Assemble ingredients
In a moderately heated pan add oil, add mustard seeds + curry leaves and allow to sizzle, then add onion and sauté till pinkish. Add chopped veggies + ginger paste + turmeric and stir fry for 4-5 minutes till veggies turn soft. - 2
Then add washed and drained flattened rice and mix very gently, add sugar + salt. Cover and cook for 3-4 minutes.

Add lemon juice, mix well and switch off the flame, keep in stand-by mode for 1-2 minutes and POHA is ready to serve.

Serve hot.
