This is my unique dish. Undhiyu is a famous gujarati sabji. The main vegetables used in this dish are papdi dana, potato, sweet potato, yum.... In undhiya chat boiled and fried vegetables are mixed together with green coriander garlic chutney, sesame oil and nylon sev. Very tempting and easy to make.
In this dish green garlic is the key ingredient. It is must in chutney. If available you can add pulp of woodapple too in chutney.

Cooking Instructions

Wash dana papdi. Put clean cloth into a bowl with holes. Put papdi into. Sprinkle 2 teaspoon salt and ajwain and close with sides of cloth. Cook into pressure cooker until 3-4 whistles.

Then separate seeds from boiled papdis and remove skin.

Boil potatoes and sweet potatoes in pressure cooker. (Don't overcook).Remove skin and cut into dice. Peel yum (ratalu), cut into dice and boil by steaming. (see in pic)

Shallow fry or deep fry diced potato, sweet potato and yum in oil until golden.

For chutney: grind coriander leaves along with chopped green garlic, green chilies, ginger, salt, peanut, cumin seeds, jaggery and lemon juice. Add water gradually and make chutney.

In a bowl take papdi dana, fried potato, sweet potato and yum. Add salt, chat masala and red chili powder. Add generous amount of chutney.

Pour 1-2 tablespoon oil and apply nylon sev. Spread some chopped coriander leaves. Combine well and enjoy delicious undhiya chat.
