Ingredients

  1. 12 ozPotatoes (cut into 1 1/2-inch chunks)
  2. 1 smallZucchini (sliced into rounds)
  3. 2Bell Peppers (chopped into 1-inch squares)
  4. 1 cupRed Onion (sliced)
  5. 2 tbspOlive Oil
  6. 2 tbspBalsamic Vinegar
  7. 1/2 tspBasil
  8. 1/2 tspOregano
  9. 1/2 tspChives
  10. 4Garlic Cloves (minced)
  11. 1Salt and Pepper to Taste

Cooking Instructions

    Preheat oven to 425℉.

    Prepare a shallow roasting dish with nonstick cooking spray.

  3. 3

    Combine potatoes, zucchini, both bell peppers, and the red onion slices and place in roasting dish.

  4. 4

    Whisk together the olive oil, balsamic vinegar, basil, oregano, chives, garlic and salt and pepper.

    Drizzle sauce over the mixed vegetables and toss to coat.

  6. 6

    Roast vegetables until tender, about 45 minutes. Stir halfway through the cooking time.

Revisit your cook time. It was in for nearly an hour. Veggies were still hard. Chicken was not fully cooked. The oven is new, electric, induction oven. 🤷🏻‍♂️
