Have you ever bought a bag of carrots at Costco? So many carrots, so few ideas. My grandson said "let's cook Pappaw!" He's only 3 years old and I wanted him to have a good cooking experience that was easy enough for him to do. I looked in the fridge and saw this humongous bag of carrots. So, we got the food processor out and started to work. He loved it. It was easy, tasty, and a great experience for a 3 year old. When finished he said "Pappaw, I mixed it all by myself!" A Kodak moment for sure.

Ingredients

  1. 2 lbShredded Carrots
  2. 1 canCrushed Pineapple (20 oz)
  3. 1 cupSugar
  4. 1 1/2 cupMayonnaise
  5. 1 cupRaisins

    This is simple and tasty. Pour canned pineapple with liquid in bowel over the top of shredded carrots. Add raisins. Scoop mayonnaise on top of these ingredients. Then add sugar on top of mayonnaise. I find adding in this order provides the liquid mix necessary for a great salad. Now, take a wooden spoon or other large spoon and simply stir the mixture until well mixed. Put salad in refrigerator at least 2 hours for best results.

    I have found that this works well when left overnight in refrigerator. Also, this recipe can be easily adjusted for both larger and smaller batches. Sugar and mayonnaise ratio can be adjusted too for those needing less sugar and/or fat.
