Cooking Instructions

Cut the crusts off the bread.

Reserve a tablespoon of butter from the butter in the recipe ingredients. Use the rest to butter the slices of bread.

Spread the jam/preserves onto three slices, then put the other slices on top of them to make three sandwiches.

Stack the sandwiches and cut through them all to make each one into three long fingers
- 5
Beat together the egg, milk and vanilla in a shallow bowl.

Melt the oil with the reserved butter in a saute pan (the oil is to stop the butter catching or burning)

Dip the fingers in the egg mix then add to the pan (in batches depending on the size of your pan) Fry each side for about 2 minutes until golden brown.

Drain on kitchen paper, then serve, sprinkled with sugar.

I always make these financiers with leftover egg whites after making custard or custard pudding.The browned butter after filtering came out to about 45g.I think 70 g of sugar is just right, but increase to your liking.Using maple syrup instead of honey is delicious too.The baking time in Step 10 varies on your oven. These are a somewhat gourmet version of the American breakfast sandwich with an Aussie twist - BBQ sauce and rolls! My Aussie boyfriend affectionately calls these "Mindy heroes" and I threw them together after he wanted something like the Starbucks breakfast sandwiches we ate in the US. Our favorite bread to use for them is the triangle shaped Vitastic Turkish rolls, but crusty fresh bread rolls like tiger rolls work great too! Use whatever cheese you fancy, but I recommend Gouda or Swiss. You may need to vary the bacon cooking time depending on thickness and how crispy you want it. I reached this recipe after trying various amounts of ingredients.The batter tends to stick to the moulds, so line the bottom of the moulds with baking paper. It's easier. I created this recipe after taste-testing my favorite store bought financiers several times.3 medium sized eggs yield 100 g of egg whites. You can measure out the egg whites first, and adjust the amounts of the other ingredients accordingly. I reduced the sugar as much as possible in order to enjoy the almond and butter flavors. So I increased the amount of butter and made it into melt-in-your- mouth Florentine.The cookie dough should be rich in butter, and the sugar has to be powdered sugar.
