Ingredients

  1. slow cooker
  2. 2 lbpork shoulder
  3. 1 cupyellow onion, chopped
  4. 8 clovegarlic, chopped
  5. 2 tspcumin
  6. 1 tbspolive oil
  7. 2 tspsmoked Spanish paprika
  8. 1/2 tspred pepper flakes
  9. 4 tbspCuban sofrito, recipe in my profile
  10. 1 (15 ounce)can diced tomatoes
  11. 1 tspsalt
  12. 2 cupcooked black beans
  13. 2 cupcooked white rice
  14. 1/2 cupchopped red onion
  15. 1diced fresh avocado, mixed with fresh lime juice, 1 teaspoon

Cooking Instructions

    For slow cooker recipe,

    Brown shoulder in oil on all sides in dutch oven over medium high heat

  3. 3

    Remove browned shoulder and place in slow cooker.

  4. 4

    De glaze pan from shoulder with can of tomatoes, add to cooker.

    Add all other ingredients except for red onions, beans, avocado and rice. They are for sides.

    Cook on high for 5 hours.

    Remove pork and shred meat. Return to cooker and mix all ingredients.

    Plate by adding rice then black beans, pork with sauce, red onions and topped with cubed avocados.

    For pressure cooker ;

    Follow same steps but place meat and ingredients in pressure cooker on high setting for 35 minutes.

    Remove and shred meat and plate same way.
