DIY Strawberry Fruit Yoghurt

I have a little cookbook I picked up from a street vendor in Nairobi. It's called Poor cook, and it has recipes for people on a budget. In it, I found this little recipe on how to make your own yoghurt which is surprisingly incredibly easy. It was the first recipe I attempted from this book because:
1.Who knew you can make your own yoghurt without cultures and all that good stuff? Not me😮
2. It is a lazy recipe... Just throw everything together and the yoghurt just forms itself.
3.The possibilities (in terms of flavour) are endless. Have you had banana yoghurt? Or papaya? No? Now you can make it yourself🙌

Cooking Instructions

Heat the milk until it is almost boiling. You see that point where it is almost rising? There. Remove from heat.

Remove all traces of cream from the mik.

Add in the tablespoon of ready made yoghurt. Mix well.

Keep mixture in a warm place. Places I'd recommend: Outside, covered in the hot sun, in a vacuum flask, in a warm oven, near a lighted jiko... The possibilities are endless. You will keep it there for 6-8 hours. Leave it undisturbed during that time.

Now when you check it after the 8 hours you will find that there id yogurt covered with water on the top. This water may be used to make more yoghurt(in the place of ready made yoghurt) OR you could just mix it back in with the yoghurt.

Now for the flavouring: The world is your oyster! I used strawberry essence and swetened my yoghurt. Then added my fruit chunks inside to make it a Diy strawberry mango papaya yoghurt. I threw on some coconut flakes on the top for extra flavour as well.

P/s: If you have actual access to the natural form of the flavour you want: say, strawberry, the yoghurt would taste waay better if you used those instead of an essence. How I would go about this is to blend my diy yoghurt with the fruit. Just look out for fruit that is watery and go easy on it, as you wouldn't like to have a watered-down yoghurt.
