The most beaitiful Pasta is Ravioli for me. And this Ravioli recipe can be a perfect dish for Valentine's night. And I guarantee, your Valentine will be really impressed with the taste and the look of the dish by the end of the dinner. And not to mention, it is so healthy too.

I gave it a healthy twist by making in wheat flour with beetroot puree and also i prepared béchamel sauce in oats flour. The stuffing is of mushrooms and onions. Let's make ravioli pasta from scratch.

  1. For the dough; Wheat flour 1 cup
  2. Beetroot puree 2-3 tablespoons
  3. Salt as per taste
  4. Few drops of oil
  5. For filling; 6-10 mushrooms
  6. 1large onions
  7. Salt and pepper as per taste
  8. 2teaspoons Oil
  9. For Béchamel sauce; 2 tablespoons fine oats flour
  10. 2-3teaspoons butter
  11. 3/4cup milk
  12. Salt and pepper as per taste
  13. For the dough; Wheat flour 1 cup
  14. Beetroot puree 2-3 tablespoons
  15. Salt as per taste
  16. Few drops of oil
  17. For filling; 6-10 mushrooms

    For dough;
    Knead a smooth dough by mixing flour, puree and salt. Add water as required.

    Apply some oil and cover and set aside.

    For filling
    Finely chop onion and mushrooms.

  4. 4

    In a pan heat oil add onions and sautè.

  5. 5

    Add mushrooms and fry till soft.

    Sprinkle salt and pepper mix and set aside to cool.

    Let's make the sauce;
    In a pan heat butter add flour and mix so that no lumps form.

    Fry the flour till bubbles form and it is cooked.

    Then add milk and whisk thoroughly.

    When it comes to a boil remove from heat add slat and pepper, mix and set aside.

    Let's prepare ravioli
    Roll the dough thinly and cut long strips of around 2 inch width.

    Spoon small portions of filling on the strip 2 inch away from each other.

    Lay another strip on top and press the sides to seal. Cut into squares and repeat till all the ravioli pasta are ready.

    Boil some water with salt. Add prepared ravioli pasta 3-4 at a time and let them cook for 2 minutes.

    They will start to float when they are cooked.

    Remove them on a plate and repeat the same with other pieces too.

    Serve with béchamel sauce. I decorated with mint and caraway leaves and serve.
