Do you like a quick, vegan, easy-ingredients, and good-tasting cake? I have adapted #aliciak 's #bestchocolatecakeever 's recipe to baking sheet size and measured out all amounts in metric. Much faster to work with a scale, but be precise.
This sheet cake is great as a layer sheet cake, as each layer is quite low and can be stacked very well. Just add frosting /filling e.g. my vanilla frosting recipe to each in-between layer before you top-coat with the chocate glaze.

Ingredients

20 servings
  1. Sift dry ingredients
  2. 330 g (2 1/2 c)all purpose flour
  3. 370 g(< 2 c) sugar
  4. 73 g (2/3 c)cocoa powder unsweetened
  5. 1 tsp (6 g)Himalayan salt
  6. 2 tsp (13 g)baking soda
  7. Combine wet ingredients
  8. 475 ml (2 c)warm water
  9. 2 tspvanilla extract
  10. 128 ml (2/3 c)olive oil
  11. 2 tsp (12 ml)apple cider vinegar
  12. Oven
  13. 175°C
  14. rackMiddle
  15. 25min in lined baking / cookie sheet
  16. Frosting 2-step
  17. 200 gspreading consistency peanut butter
  18. 1/2 cglazing / powdered sugar
  19. 4 tbspvegan butter
  20. 2 tbsp(vanilla / coffee flavored) plant / nut milk
  21. 2 tbspcocoa powder
  22. 1-2 tspvanilla extract

Cooking Instructions

    Combine all ingredients at once as original recipe calls for or follow my steps :

    I sifted the dry ingredients by blending them at a high speed

    And I combined the wet ingredients in the main mixing bowl

    Now add both together and give it a nice stir till no more bubbles of flour appear; tiny clumps at the end are ok

    Pour into lined baking sheet or other cake form and with a spatula make sure to push the liquidy dough into all four corners of your baking sheet

    Bake for 30min in warm oven

    Let cool down

    If you are with me in just loving the whole peanut butter and chocolate thing, then stick with my slight change to the original recipe :

    After having warmed up peanut butter, spread it evenly over top of cake

    Let cool very well

    Now prepare the chocolate glaze :

    Bring sugar, margarine, milk, and cocoa to a boil stirring constantly

  13. 13

    Reduce heat to a simmer for 2 min while stirring

  14. 14

    Remove from heat and stir for another 5 minutes

  15. 15

    Add vanilla, stir, and immediately pour onto cake

  16. 16

    Glaze will dry quickly, so add any sprinkles now

    Let glazed cake cool for an one hour
