Again the ingredients’ quantities are a little vague; I just go on how I feel!

Saturday night Special Fried Rice

Ingredients

  1. 2chicken breasts diced
  2. 200 gbacon lardons
  3. Olive oil
  4. 1onion chopped
  5. 2garlic gloves chopped
  6. 1each green,red and yellow peppers diced
  7. Sun dried tomatoes chopped
  8. Black olives halved
  9. Tinsliced mushrooms
  10. Cooked rice
  11. Chilli flakes
  12. Soy sauce
  13. Lemon juice
  14. Can/bottle of beer/lager of choice (optional)

Cooking Instructions

  1. 1

    Fry the onion and garlic in the olive oil until soft. Add chilli flakes

  2. 2

    While the onion and garlic are cooking dice the peppers and add to the pan stirring continually

  3. 3

    Chop the sun dried tomatoes and add to the pan; slice the olives and add to the pan; drain mushrooms and add to the pan; continually stirring each time

  4. 4

    Take a drink of the beer/ lager (this step can be added whenever and however often you feel)

  5. 5

    Dice chicken and add to the pan; stir until the chicken is brown all over (take a drink 😉)

  6. 6

    Add bacon lardons and continually stir until brown

  7. 7

    Add rice and continually stir

  8. 8

    Add good helping of soy sauce and lemon juice and stir well

  9. 9

    Cook for around 5 minutes while you clean up- stirring occasionally and serve
