Ab kachori ko sekne ke liye maida ke dough ki choti balls size le le or uski sides ko patla bel ke usmei daal ka mixture daal ke maida ki ball ko pack ker de or halke haath se usey press kerke kachori ko shape de de or 10-15 mins rest kerne ke loye rakh de. Ab ek pan mei kachori sekne ke liye oil daal le or ussey pehle 2 mins high flame pe garam kerle or phir flame ko low kerke usmei kachori ko dono side se acche se golden brown hone tak sek le or acche se sekne ke baad tissue paper pe nikal le

Ab aaloo ke jhol ko bana ke liye adrak,hari mirch,laung,or kali mirch ko mixer mei peesle. Uske baad gas pe ek kadhai rakh ke usmei 3 tbsp oil daal ker garam kerle, uske baad usmei jeera or heeng add kare, iske baad ismei lal mirch, haldi, dhaniya powder or besan daal ke halka sa bhoon le.

Mixture ko thoda bhoon lene ke baad usmei boiled aaloo ko mash kerke daal de or acche se chala le. Uske kadhaai mei mattar, or paani daal ke acche se high flame pe mix kerle. Ab ek katori mei thodi si heeng or thoda sa paani mix kerle or 10-15 mins ke baad aalloo ke jhol mei paani or heeng ke mixture ko add kerle or aaloo ke jhol ko 30-35 mins pakne ke liye chor de.

Platting ke liye ek plate mei kachori nikal le or ek bowl mei aaloo ka jhol nikal le or dhaniye ki chutney ke saath platting kare or garnishing ke liye fresh mint leaves ka istmaal kare.
