Macrobiotic Cocoa & Banana Muffin

This is a variation of my own healthy recipe for "Macrobiotic Banana Muffins"that I made for Valentine's Day by adding cocoa. They're so healthy and the richness of the cocoa goes really well with the sweetness of the banana. It's a simple recipe, so give it a try!
Cooking time will vary depending on your oven so adjust it accordingly. If you don't have any wheat or whole wheat flour, replace it with 140 g cake flour. If you don't have a food processor, use both hands to rub the flour until it becomes crumbly. As a measure of safety, I recommend cutting off the top 1 cm of the banana and throw it away. Cooking Instructions

Preheat the oven to 180°C. Mash 200 g of the banana and slice the remaining banana into 12 rounds.

Combine the ingredients marked with * in a food processor together with the canola oil and blend until it becomes crumbly. If you're not in a hurry, feel free to sift the ingredients in.

Transfer the mixture from Step 2 into a bowl and mix in the oatmeal. Finally add the soy milk and mashed banana and mix gently.

Line the muffin tins with glassine paper cases and pour in the mixture. Top with the banana slices and bake for 30 minutes.
