Githeri is a well known Kenyan dish common with the central region of the country. To break the monotony of eating githeri plain you blend with cabbage. It is suitable for lunch.

Ingredients

  1. 2 cupscooked githeri (mixture of corn and Bean's)
  2. 1medium onion
  3. 250 GMscabbage sliced into small pieces
  4. 1tomato
  5. to tastesalt
  6. 3 tablespoonoil

Cooking Instructions

    Heat the cooking oil in a frying pan

  2. 2

    Add chopped onions and fry till golden brown

  3. 3

    Add tomatoes and fry slightly for about 2 minutes

  4. 4

    Add the sliced cabbage and githeri then cover with a lid and cook for 5 minutes

  5. 5

    Stir well to mix githeri and cabbage

  6. 6

    Serve hot
