It's that time of the year again. I've overindulged through the holidays and now it's time to get rid of the 10 pounds I always seem to gain. This chowder has all the flavor of a full fat version with only 6 grams of fat and 132 calories per serving.

It's that time of the year again. I've overindulged through the holidays and now it's time to get rid of the 10 pounds I always seem to gain. This chowder has all the flavor of a full fat version with only 6 grams of fat and 132 calories per serving.

Ingredients

4 servings
  1. 2 slicesbacon, diced
  2. 1/2 cupdiced onion
  3. 1/2 cupdiced celery
  4. 1 clovegarlic, minced
  5. 3 cupschicken broth
  6. 2small stalks thyme
  7. 1/8 tspsmoked paprika
  8. 1/8 tspblack pepper
  9. 2 cupssweet corn
  10. 1/3 cupinstant potato flakes
  11. 2 Tbspreduced fat cream cheese
  12. to tasteSalt

Cooking Instructions

    Add diced bacon to cold pot. Set to medium heat and cook until crisp. I leave the cooked bacon in the chowder, but if you prefer, you can remove with slotted spoon to add later.

    Add onion and celery to bacon (or bacon grease)and cook until tender.

    Add garlic clove and cook until fragrant, about 30 seconds.

    Add corn, broth and seasonings. Simmer until corn is tender.

    Add potato flakes and simmer until desired consistency.

    Reduce heat to low. Add cream cheese and stir until melted. Taste and add salt if needed. Serve and enjoy!

    If you removed bacon, add as garnish
