Bird's nest with eggs

It is a lacto-vegetarian dish. Mashed potatoes covered with fine vermicelli, spices with freshly ground peppercorn and deep-fried for nest and cottage cheese is mashed, spiced and deep-fried to make eggs.

Cooking Instructions

For bird's nest-

Mash the boiled potatoes and add arrowroot, salt and black pepper according to your taste.

Divide this mixture into 4 equal parts.

Take one part and give it a shape of a bowl. (There should be a groove in the center and edges should be thickened)

Take another bowl and add refined flour and water to make a paste.

Now dip bowl-shaped mashed potato patty into the mixture (maida+water) and coast it with vermicelli.

Deep fry till golden brown.

For eggs-

Mash the cottage cheese with 1 boiled potato, salt, black pepper according to your taste.

Divide it into 6 equal parts and give them a shape of an egg (oval)

Deep fry lightly and place them in the nest.

Garnish with coriander leaves.
