Trying to eat healthy for the new year... So here goes my chicken salad

My mother inlaw was a lovely Japanese American lady. She would make sushi, ribs and all sorts of delicious Japanese foods for New Year's. It's a family tradition that I'm doing my best to follow. Mom's Somen Salad is one of our favorites, and I hope you'll love it too! Happy New Year!

This recipe was shared with me by my sister-in-law Joni! It's easy, fresh, and very delicious. This is definitely an amazing summertime salad, but we've splurged and enjoyed this salad throughout the year. Sometimes I make the dressing to eat with other fresh greens! It's by far my favorite Poppy Seed Dressing. Enjoy.
