Ingredients

  1. 5carrots
  2. 5-10 stalkscelery
  3. 1 headcabbage
  4. 1 cancrushed tomatoes
  5. 24 ozlow sodium V8
  6. 1 packetonion soup mix
  7. 1white onion
  8. 1 cankidney beans
  9. 2 tbspyellow mustard
  10. 2 tbspWorcester sauce
  11. to tastesalt & pepper
  12. 1-2bay leaves
  13. 2 tspground mustard
  14. 2 tspcumin
  15. 1 tsporegano
  16. 16 ozchicken stock
  17. to tastecayenne (red pepper)
  18. water
  19. olive oil
  20. garlic cloves or powder to taste

Cooking Instructions

  1. 1

    Saute onion, carrot, celery in oil until translucent. Add garlic, cook for 1 min.

    Add chopped cabbage, tomato, and spices. Stir to combine.

  3. 3

    Add remaining ingredients. Add enough water to cover the vegetables.

  4. 4

    Bring to boil, reduce to simmer until vegetables are cooked through, stirring occasionally.

The beautiful thing about soup is it's flexibility. If you don't like an ingredient, omit it. Also feel free to add to it. Delicious additions or substitutions include: butternut squash, whole, chopped tomato, green beans, lentils, rice, zucchini, corn, etc... The possibilities are endless!
