Easy Melon Bread

When I was trying to make muffins, I didn't have milk, so I turned it into melon-bread style cookie bites. It's not exactly melon bread but it's like eating the surface of melon bread, and it's delicious. Great as a kids' snack.

When you are measuring the ○ ingredients, cover the bowl with a plastic bag. If the dough sticks to your hands during the summer, let it sit in the fridge for a little while, use a spoon, or dust flour on your hands. I used 1 stick serving of granulated sugar (5 g). Ingredients

4 servings
  1. 120 grams○Cake flour
  2. 3 grams○Baking powder
  3. 30 grams○Sugar
  4. 30 gramsVegetable oil
  5. 1Egg
  6. 5drops Vanilla extract or vanilla oil

Cooking Instructions

    Add the ○ ingredients into a bag (refer to "Helpful Hints"). Shake the bag to incorporate air into the batter. Add the remaining ingredients (beat the egg) and rub in to blend well.

    Shape into balls, and arrange on a baking sheet. Score patterns with a knife, and sprinkle with granulated sugar. Bake in the oven for 20 minutes at 180℃.

    When you use melted butter instead of vegetable oil, it will add more flavour and make the bread delicious. I think it would also be tasty to use melon extract instead of vanilla extract.
