I love carrot salad. So, I mixed in some ingredients that I thought would go well with it.

I used green apples in this recipe. Apples from England are only about the size of your palm, but if you use Japanese apples, use 1/3-1/2. Recipe by KT121

Ingredients

2 servings
  1. 1 largeCarrot
  2. 1 smallApple
  3. 1 bunchWalnuts
  4. 3rounded spoonfuls Dried cranberries
  5. 1 dashChopped parsley
  6. 1 1/2 tbsp●Olive oil
  7. 1 1/2 tbsp●Cider vinegar (or apple vinegar)
  8. 1 tsp●Lemon juice
  9. 1 dash●Salt and pepper

Cooking Instructions

    Dry-roast the walnuts. Combine the ● ingredients in a bowl.

    Peel and julienne or grate the carrots. Wash the apple and cut into thin wedges.

  3. 3

    Add the apple to the bowl from Step 1 and mix together. Add the remaining ingredients, mix, and serve.

  4. 4

    If you let it sit for 20-30 minutes, the flavors will settle and become even more delicious.
