My best attempt to re-create my grandma's amazing recipe. I'm pretty sure she didn't use sour cream but I found it works out very well.

Ingredients

50-60 min
~8 slices
  1. 1 3/4 cupflour
  2. 1egg
  3. 1 teaspoonbaking soda
  4. 1 3/4 cupchopped dates
  5. 1 teaspoonvanilla
  6. 2 tablespoonssour cream or Greek yogurt
  7. 1/2 cupbrown sugar
  8. 1/4 cupsugar
  9. 2 tablespoonsmaple syrup
  10. 1 cupchopped walnuts
  11. 5/8 cupboiling water
  12. 3/4 stickbutter

Cooking Instructions

50-60 min

    Chop dates to 1/4 inch cubes

    Add the chopped dates to the boiling water. Add baking soda and let stand for 15 - 20 min.

    Add butter to bowl and cream in all sugars. Then add egg, vanilla and sour cream.

    Add date mixture to the wet ingredients.

    Gradually add flour and walnuts and fold in. Do not mix too much.

    Place in a loaf pan greased with butter and bake at 330 °F for about 1 hour.

    Cool for about 1/2 hour and enjoy!
